Trust me, it’s better than it sounds! Especially for a soup made solely to use up every last scrap of that pricey organic broccoli….
4 large stems of organic broccoli
3 to 4 cups organic vegetable broth
fresh ground pepper pepper
fresh grated pecorino romano cheese
Slice the broccoli stems as thin as you can and toss into a pot. Add some pepper and a little bit of broth and cook for 5 minutes or so. Once broccoli begins to brighten and soften, add the rest of the broth and cook until completely tender. Strain out some of the cooked broccoli stems and set aside; then blend the remaining soup till smooth. Add back in the reserved broccoli, ladle into individual bowls, and top with a good helping of cheese. Yes, it’s that easy.
