Open Chicken Souvlaki

Open Chicken Souvlaki

  • 2 boneless skinless chicken breasts, pounded to a 1/2″ thickness
  • 2 cloves garlic, chopped
  • 1-1/2 tablespoons lemon juice
  • 1 teaspoon red wine vinegar
  • 2 heaping tablespoons plain Greek yogurt
  • 1 tablespoon dried oregano
  • salt and pepper
  • store-bought tzatziki
  • sliced cucumbers
  • shredded lettuce
  • pita bread

Whisk together the garlic, lemon juice, vinegar, yogurt, oregano, salt and pepper in a bowl. Add the chicken and mix until well coated. Cover and refrigerate overnight, if possible. Grill chicken until cooked through, about 6 minutes per side. Allow the chicken to rest for a few minutes before slicing into strips. Meanwhile, heat your pitas also on the grill for a few minutes on each side. Top each pita with chicken, tzatziki sauce, cucumbers and lettuce. Optional toppings could be tomatoes, onions, kalamata olives and feta cheese.

  1. Looks great! I can’t eat it because I keep kosher and we separate meat and milk products, but it looks very tempting!! I had some great hummus a few days ago, have you ever made that?

    • Thanks for checking out my blog! You could also try marinating the chicken in Greek dressing instead of yogurt. The yogurt just acts as a tenderizer and keeps the chicken moist, but I think Greek dressing would work just fine!
      I found this recipe that seems pretty simple:
      3 tablespoons olive oil
      1/2 teaspoon garlic powder
      1/2 teaspoon dried oregano
      1/2 teaspoon dried basil
      1/4 teaspoon pepper
      1/4 teaspoon salt
      1/4 teaspoon onion powder
      1/4 teaspoon Dijon-style mustard
      3 tablespoons red wine vinegar

      I haven’t tried making my own hummus yet, but it’s on my to-do list!

  2. This looks very yummy. Never made chicken gyros myself – now go to try it! And Oscar is just too cute! Our Stitch love Greek yoghurt as well!!
